Zein, the major prolamin in corn, is the perfect coating agent by its excellent film-forming capability, low hydrophilicity and high oxygen barrier property. Zein is presently used in foods and pharmaceutical ingredients for quality preservation, fresh-keeping and glazing.

2amino acid is of covalent poly peptide chain of peptide bond form by connecting the two terminals,and it has carboxyls and amidogens. The produce is of main formation of hydrophobic amino acids (valine,lucine,isomerous lucine and phenyhlalanine )with α helix and βpleated sheet.

PHYSICOCHEMICAL PROPERTY

Yellow of light yellow flakes or powder, light smell,

easily dissolves in ethanol of 80-92%and acetone of 

70-80%,but doesn't dissolve in water and absolute ethylalcohol.
